What is your favorite vegetable?
Mine would have to be squash and zucchini fried with a little olive oil and salt and pepper! Yummy

Corn is our family favourite. When it is in season we eat it every day. Out of season we eat frozen like their is no tomorrow!

I love Eggplant sliced with a little EVOO on it and baked in the oven.
I live in Virginia too! It is sooo gorgeous out today! Easy ~ My favorite veggie is asparagus - even when I was little I loved it!!

Carrots & corn would be my two fav. :)
Mushrooms, zucchini and green chiles all warmed up together. It is my comfort food. However, my Hubby and kids are very happy to let mom have her comfort food and don't even want to taste it anymore.
Love it! Finally something I can eat in peace and quiet!

Ohhh I am new at this also and did not know this so thanks for the info! I love, love, LOVE bell peppers! Ummm did I stress the love part?!
